For traditional Italian-American cooking, the sweet, strong flavor of Turkish oregano can't be beat. Our travels to this area have allowed us to import some wonderful Turkish oregano, the best we've seen in years. Try some on baked chicken, pork and fish. For a simple salad dressing or marinade, mix 1 TB. Turkish Oregano with 1/2 tsp. each black pepper and garlic, add to 1/2 cup olive oil and 2 TB. balsamic or red wine vinegar. Add salt to taste and a dash of honey and/or brown mustard for green or pasta salads, chicken, lamb, fish, or vegetables.
